Brisket rubbed with my favorite Memphis rub (Lambert's) 4-time winner of Memphis in May, 2005, 2008, 2009 and 2013. Also smoking bratwurst sausage made with ham and Gouda cheese. Waiting on BAMA/LSU. Mommas out in Texas so a little misbehaving may be a-happenin' , Nothing serious. Side dishes include smothered cabbage and smoked pork belly pintos - barrocho style. - yeah I misspelled it. Anti war, 60's tunes on the Bose Bluetooth. Dylan is killing it. Alright boys and girls, if you're going to drink all day, you gotta start early.

Jeff, what say you? I know y'all got your warm droors on up there. I just got back from Davenport last night. Friday morning it was a crisp 12 f and windchill was single digits.

Once everything gets settled in I plan on trying the JeffJ garage smoking technique.

I saw an ad for that one recently, they were drinking it with a polished ice cube, in glasses on a golf course (lol). I've been working thru Evan Williams Kentucky Cider.

I'm making pot roast in the slow cooker because I'm currently out of fuel for the grill... I need to start looking at recipes to up my side dish game before I head to the store after the FSU game.

Ala vs LSU later today too! Who thought it would be a good idea to have such a top tier matchup not be prime time?

Dry brining small pork butt for Egg tomorrow. No more thought than that so far. Winter storm #4 for 2019 coming.

Did it last night. Potato wedges, brussels, portabella caps and a t-bone in the Smokey Mountain - ran it like a grill, not a smoker - for me and my wife. Oh, and too many beers and red wine. I was in a particularly jovial mood having witnessed MSU lose against Illinois in epic fashion - outscored 27-3 in the 4th quarter.

This Friday I am off work and will be hanging a prime-grade packer in the Pit Barrel Cooker for the UM/MSU tailgate in 6 days. Can't wait!

My garage is perfect for this. It has an overhang so the grill/smoker isn't actually in the garage but the overhang protects it from rain/snow (we are supposed to get 5 inches tonight, BTW). I still much prefer being on the patio using my bigger rigs, but the Jumbo Joe and 14.5" Weber Smokey Mountain carry me through the winter with a rare assist from my Weber Spirit gas grill (which also resides in the garage).

Fortunately the Egg is impervious to cold given how well insulated it is.

Sometimes too well... hard to get the temp back down if it gets away on you. -12C now and dropping.

I've always resisted getting one of those combustion fan controllers but might give one a go this winter.

Yeah, that's the knock I've seen on ceramics - once you over-shoot it's real difficult to bring temps back down.

It is. Mine was 20 degrees over target for hours last night and it got down to -21 ambient.
