imo, the main issue with 3D-printed food is that I am concerned about what, exactly, I would be eating.

So far, all of the, let's call them, artificial foods I have seen in my local supermarket are loaded with sodium.
I can buy a real beef hamburger, and it has a low (near zero?) sodium content.
Yet the artificial beef seems to have a lot of salt in it to ~enhance the flavor.~
Of course, that raises my first question, if the artificial beef is deemed to be so good, why then the need for all the salt content?
Real beef does not need that level of salt content to enhance the flavor.
Stated differently, and I trading cholesterol in my arteries due to the saturated fat of real beef for high blood pressure due to the sodium content of artificial beef?
Do the artificial foods needs excessive sodium levels in order to taste good?
Serious questions....

I can't quite figure out who the market for this would be. I imagine most hippie/vegan/woke types won't even eat GMO corn, let alone lab grown fish.

This is a terrible idea. Meat off all types, but especially fish, is not just protein. It's full of macro and micro nutrients. I incredibly doubt an artificial meat source, let alone a 3d printed one, can recreate a natural nutrient profile.
This is a great way to feel like you are doing great things, and destroying your health in the process.

As someone who's been vegan for a dozen years and vegetarian for a half decade before that, I can assure you that every contact I've had with mycoprotein has been unpleasant. The stuff simply tastes horrible. Further, this is a highly processed food. That means it will not be actually healthy for you, though they're trying to market it as such. As a highly processed food, it will also be expensive and have a high carbon footprint relative to more whole food options. That obviates at least two of the three primary supposed benefits of mycoprotein; those being that it is inexpensive to make and has a relatively small footprint per kilo of protein.
The term "flexitarian" is a non-existent consumer who, while still consuming meat, consumes a significant amount of plant-based protein out of concern for their health and the health of the planet. I cannot stress enough how much this person does not exist. It's almost entirely marketing hype. Some people lie about how much animal products they eat and how willing they are to eat vegan products when asked by pollsters because they understand the deleterious effects eating meat has on the climate and their personal health. But when you actually look at what those people actually eat, they eat a standard amount of meat and almost never eat any vegan alternatives. Sure, in theory, they'll say they'll eat a vegan product if it tasted just like meat. In practice, none of those products actually taste like meat and they never actually buy them because actual meat is cheaper, they're more familiar with it, and it tends to taste better.
The reason for the term's existence is simple. Most people are neither vegan nor vegetarian. Vegetarians only make up ~1% of the population. If you're a food processor start-up and you go to a bunch of VCs for your initial funding round and begin by telling them that your target market is only 1% of the population, you're unlikely to get much funding. But if you claim that 20%, 30%, or even 50% of the general public would love to swap one or more meals a week for your product, then you get to be a unicorn. That's where the money for the (failed) "Meatless Mondays" campaign came from. It's also why you got marketing for the Beyond and Impossible "meats" with copy talking about how much they tasted like meat and how the burger would "bleed" when cooked. I, and every vegan I talked to about this, found such copy deeply off putting. (If you're vegan for more than 6 weeks, meat starts smelling awful to you.) You know, the people who actually might buy your product with any regularity.

I'd rather transition to eating insects than lab grown meats.
That's some science fiction I don't want to partake in.
The 70s loaded foods with preservatives and chemicals and it's negatively affected people. Pretty sure it's what's increasing ailments in children.
Now it's just all chemicals. Can't wait to see what it does to people who add it to their diets. Can't wait to see what those chemicals do to their offspring.

Flexitarians? That's the dumbest dietary excursion I've ever heard and I've heard some really dumb ones. I've been vegetarian/vegan for going on 30 years. I used to date a woman who told me they were pesca-pollotarian. I asked what that meant and they said it's like vegetarian but includes seafood and poultry. I recommended they never call themselves that again and just say I eat meat.

They do in our house. My wife and I eat a little meat, mostly chicken, but the majority of our meals are cooked with soy based meat substitutes. We're both very healthy after years of little to no red meat and a lot of meat substitutes.

They do in my house, too. I eat mostly chicken, fish, veggies/salads, cereal and avoid sugar. I'm in great health according to my doctor. My weight is a anormal 125 and my energy level is high. My A1C is consistently around 5.9.
As for red meat, yes that too. About once a year I have a Mac attack . . . or sometimes an urge to visit Outback for a 9 oz filet. But that's it! I don't cheat in-between nor do I have the urge to.
