Blueberry Ricotta Sbriciolata
crust and crumb topping: 3/4 cup sugar 2 1/2 cups flour 1 tsp baking powder 1/2 tsp salt 2 large eggs 2/3 cup unsalted butter 1 tsp vanilla - I prefer less
filling: 1 cup whole milk ricotta 1/2 cup powdered sugar - I prefer less zest one lemon - again, half is closer to perfect
Press 2/3 crumb mixture in a form, going up the sides somewhat. Pour in filling, spread evenly. Layer 2-3 cups of blueberries. Sprinkle on the last 1/3 crumb mixture.
Bake 350 25 minutes uncovered. This comes out very light colored.
Cool for around 2 hours.
This resembles lemon bar crumb with blueberry, custardy goodness. Sweet, lemony, fresh, super rich, very Italian.
