Wonder if the restaurant will mind if we use that space to ready our own meats for consumption. Maybe they can rent it out.

So what? He's gonna cook them, right? All the bacteria and scum will be dead by the time it makes it to the table.

You can't cook away the heat stable toxins produced by bacteria. Which is why eating rotten meat isn't a good idea, no matter how thoroughly you heat it. (Which reminds me of a scene from Cold Mountain, where some characters put that theory into practice).
