Technically it's a food truck. Where I am it's required to have a brick/mortar commercial "ghost" kitchen (licensed inspected etc.) in the background... He is a pro by culinary experience and education... It's a gimmick but you need one in the food biz... It's NYC so yes the za better be bits....
