So why don't Arab countries that surround both them and Israel agree to help them?

Israel shares the region with 22 members of the Arab League with Lebanon and Syria directly to the north and Egypt to the southwest and Jordan to the east.
Notice how many Arab nations in the region are not on the side of "Palestinians" but keep mostly silent - they know all too well, from their own histories - who is actually trying (and so far failing) to commit genocide.
They know, unlike many in the West, that what is good for innocent Palestinian people (peace and trade with Israel, not "From the River to the Sea, Palestine will be free [from Israel and Jews]") is not good for their corrupt Iran's puppet leadership / terrorist gangs (ironically aka "Resistance / freedom fighters") in Gaza, West Bank, Lebanon etc. Many "Palestinian refugees" are "undesirables" from nearby Arab states.
Egypt and Jordan have been "living side by side" and trading with Israel for decades, several Arab states just signed peace and trade treaties, and the Saudis were about to do the same. So Iran (not Arab country) pulled the trigger to stop the "peace process" from completion.
