I take it he powers his kitchen with the car; when I took that 20 state trip a couple of years ago, I had AC or heat all night as needed in the hybrid, while getting 40 mpg.
Good on this kid for thinking outside the box.

Let's be real.
He's putting a shine on a situation he's making work because, more than likely, he has to.
He probably didn't have the money to rent a physical place or, if he wanted mobility, to buy and equip a food truck.
This outcome is likely a direct result of the insane economic conditions people are facing where to eat and survive you HAVE to get creative to make what capital and resources you have function in ways people used to achieve with much greater ease.

And in NYC. I love going to NYC because the food is so good. Because it has to be. You can probably find another 20 places to eat just by walking another block. Capitalism (or, at least, competitive markets) at its finest. If your food is not good, you don't last long.
